  1. For the filling, fry the onions in oil or lard
  2. Add the minced meat and stir evenly until browned.
  3. Then mix in the rice and season.
  4. Fill the cabbage leaves with the mixture and roll up.
  5. Lay the Sarmalute in an ovenproof dish alternately with the finely chopped cabbage.
  6. Pour over the sauce until the Sarmalute are covered.
  7. Bake in the oven for 1 to 2 hours. It’s quicker in the pressure cooker. Before eating reheat in the oven. Serve the stuffed cabbage with Mamaliga and créme fraîche.
  8. Mamaliga: Bring the water or the water-whey mixture to the boil with some salt.
  9. Gradually add the polenta and remove the pan from the heat, so it doesn’t burn.
  10. Then it’s time to stir, stir, stir until the Mamaliga has the texture of porridge, that doesn’t take long to make.
  11. Just before serving add a good-sized knob of butter and yoghurt.
  12. Add salt if required.

That’s where I’m from, that’s where I belong – my mountains, I can’t imagine being without them. The view at the peak arouses a feeling of freedom in me, that I can’t find anywhere else.
